Lance Corbetts- salmon marinated in a mint soy sauce
this is one of my recipes that i have just created.
ingredients:
1 salmon fillet
2 asparagus
2 smoked salmon slices
2 tablespoons sour cream
1 english muffin cut in 2
mint sauce
soy sauce
spinach
lemon juice
knob of butter
oil
salt
chive and grapefruit sourcream- refer to bottom
1 teaspoon of sugar
method :
1.preheat oven to 150 degrees
2.sprinkle salmon fillet with sugar and coat in mint sauce and soy sauce
3.wrap in baking paper and place on a baking tray and into the oven for 30-40 minutes
4.gently toast english muffin halves
5.sautee asparagus in oil and butter till soft-season with salt
6.sautee spinach in lemon juice
7.spread chive and grapefruit sourcream evenly over smoked salmon slices, place on the sauteed asparagus, and gently roll
8.when salmon is cooked place in a hot pan skin side down fry till crispy
9.plate all components
10.place on top of salmon a spoonful of chive and grapefruit sourcream to finish
chive and grapefruit sourcream :
juice of 1/4 grapefruit
finely chopped chives
2 tablespoons sour cream
1 pinch of salt ant sugar to season
method:
1.combine in a bowl

Great day at Careers expo
Hey Guys the wairarapa careers expo on that was held on Tuesday 12th May was a great success. I managed to fill every seat in the Frank Cody Lounge at the Masterton Town Hall. The audience was Fantastic. Got asked some really good questions and at the end were even more interested in getting into the industry than they were before.
